The Scenario:
- I worked late and am not feeling terribly creative
- I don’t have time for prep, I’ll need something that can be quickly assembled
- We’ve recently had pasta night and taco night, so those options are out
- We have ripe avocados, mushrooms and some tofu that should be eaten
The Solution: Somen noodles with sesame-soy dressing, tofu, mushrooms and avocado
The Plan:
First I’ll grate some ginger and heat up some oil to sautée the mushrooms. Then I’ll put a large pot of water on the stove to boil. While that’s heating I’ll drain, press and slice the tofu and make the dressing with soy sauce, mirin and sesame oil. I’ll grate some carrot, chop a bit of red cabbage and crumble some nori for garnish. When that’s done I’ll boil the tofu with the noodles and slice the avocado while they are cooking. I’ll add a little soy sauce to the mushrooms and keep stirring them. Once the noodles are done, I’ll toss them in the dressing and bring everything to the table. Done!
