My daughter is sick with a cold. (She somehow manages to be sick every Halloween!) I’m picking her up early from preschool and we’re skipping ballet lessons. I was going to do a taco night tonight, but the truth is I’m kind of sick of that. Now that I think about it, maybe I’m getting a bit sick too…
In fact, I want soup. So will my daughter. My husband? He probably wants taco night. But he’ll have to put up with soup. He can have tacos for lunch tomorrow. There!
Ever since discovering egg drop soup at a Chinese restaurant with her grandparents, my daughter has been pestering me to make it. This will be the ideal occasion. She also loves mushrooms and we have some, so I’ll put them in as well. I’ll make a simple dashi broth and simmer it with soy sauce plus chunks of ginger and garlic (my daughter will turn up her nose if she sees them, so we just fish them out into our bowls first). I’ll saute the mushrooms and add them to the soup, then swirl in beaten eggs at the last minute. I’ll serve it all with some plain cooked noodles, chopped green onion, spicy peppers, lemon and more ground ginger on the side.
