I’ve been saving this meal for an evening when I really don’t have time or energy. And that evening is this evening. I’ve got frozen eggplant curry and mint-cilantro chutney for the adults, frozen lentil soup for the child, and frozen naan and samosas for everybody. I’ll make some basmati rice in the rice cooker and set out some limes and yogurt. It’s going to be great!

- Samosas (an Indian dumpling, frozen)
- Spicy mint-cilantro chutney (frozen)

The plan:
I’ll set out the curry and soup to begin thawing this afternoon. On getting home with my daughter I’ll set up the rice cooker and let her push the button. I’ll reheat to curry and soup in pots on the stovetop. I’ll thaw the chutney in the microwave. The samosas and naan will be heated in the toaster oven. And the yogurt and limes will come out of the fridge and go to the table. That’s it!
