It’s election night and we plan to go to the neighbors’ after dinner to watch the results. My day was all errands and to-dos. We need something fast and uplifting that can be pulled from the cupboard, like the wonders of the Mediterranean! I’ve got thyme and oregano from the garden, as well as salad greens. I’ll add an apple to the salad for some American optimism.
My daughter loves pretty much all fish and salty things, so I don’t think we’ll have a problem there. She might pick out the herbs, or not. At any rate, we’ll all be full and ready to watch the fate of the nation unfold.
- Pasta with canned tuna, olives, capers, garlic, oregano and thyme

- Parmesan and feta cheese
The plan:
I’ve already picked and washed the salad greens. I’ll put the pasta water on the stove top to boil at around 5:45 and set the table with the ‘help’ of my daughter. When my husband comes home at 6:00 I’ll sautée the garlic in olive oil and add the tuna, capers, olives and herbs. While the pasta is cooking and the sauce is staying warm, I’ll grate some parmesan, crumble some feta, put the greens in a bowl and chop the apple. I’ll make a fast vinaigrette and then take it all to the table. We’ll eat by 6:15 and then go to watch the great American spectacle.
